Celebrate St. Patrick's Day
Broccoli Waffles (courtesy Laura Sunday)
  • 4 cups oat flakes. Grind up to flour in Cuisinart
  • 2 cups skim milk
  • 2 eggs
  • 3 cups broccoli or a big double handful of broccoli
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. vanilla

Spray waffle iron with Pam, heat it up. In Cuisinart combine oat flour, milk, eggs. Add broccoli and puree mixture. Add BP, BS, and vanilla. Let mixture sit for a few minutes. Cook waffles. Cool. Makes about 10.

Serving suggestion: Put in plastic bag in frig or freezer. Toast until crispy when ready for a yummy breakfast or lunch. Serve with combo of cut up fruit and syrup….I use Cary’s sugar free syrup.
